Chocolate Marshmallow Cookies
Perfect for Valentine's Day
This recipe is made as part of the Good Cookies Food Bloggers’ Valentine’s Event to raise money & awareness about pediatric cancer.
Ingredients
All-purpose Flour
Unsalted Butter
Egg yolk
Vegetable Shortening
Marshmallows
Graham Cracker Crumbs
Baking Chocolate
Making The Cookie Dough
Cream together butter and vegetable shortening. Add sugar and honey then egg yolk and vanilla, beating until light.
Stir in graham cracker crumbs, add flour, baking powder & salt. Stir to create dough.
PART ONE
Wrap the dough ball in a sheet of plastic wrap & refrigerate for 1 hour.
Top Tip
Don't leave the dough in the refrigerator too long, it will become too hard to roll out!
Baking & Decorating
Preheat the oven & divide dough in half. Roll the dough then cut into circles with a cookie cutter.
Bake the cookies for 8-10 minutes. When done baking, immediately place half a marshmallow on top.

Baking & Decorating
Microwave the chocolate until melted, then dip each cookie marshmallow side down.
Place on wire rack and decorate with sprinkles. Let stand for 1 hour until chocolate hardens.
