Prepare the tartar sauce before you begin frying the fish and let it chill.
Combine mayo, shallots, capers, relish, vinegar, and Worcestershire sauce in a small mixing bowl.
Whisk together the buttermilk and hot sauce to soak the catfish fillets.
In another shallow dish, combine the flours and seasonings.
