Chewy Peanut Butter Cookies

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • extra sugar for rolling

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
  2. In another large bowl, beat together the butter, peanut butter, brown sugar, and granulated sugar with an electric mixer until creamy.
  3. Add the egg, vanilla extract, and almond extract to the peanut butter mixture and beat until incorporated. Then, mix i the dry ingredients.
  4. Place the cookie dough in the refrigerator to chill for 30 minutes while you preheat the oven to 350 degrees.
  5. Place 1/4 cup of granulated sugar in a small bowl. Remove the cookie dough from the refrigerator and use a cookie scoop to portion the dough into 2-inch balls.
  6. Roll the balls in the bowl of sugar and place 3 inches apart on parchment paper lined cookie sheets.
  7. Bake for 8 - 10 minutes, until the edges just start to brown. Remove from the oven and leave the cookies on the baking sheet for 1 - 2 minutes before removing to a wire rack to cool completely.
