Slow Cooker Balsamic Chicken

Slow Cooker Balsamic Chicken is an easy main dish that's no-fuss, healthy, and extremely tasty! Serve over angel hair pasta, zucchini noodles, or with a side of steamed veggies.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 14.5 oz cans petite diced tomatoes
  • 1 medium onion thinly sliced Not chopped
  • 4 cloves garlic
  • 1/3 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp. dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or 1 tsp. dried rosemary)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Pour 1 tablespoon olive oil into the bottom of a slow cooker. Add chicken breasts and sprinkle with spices — salt, pepper, and herbs. 
  • Add the thinly sliced onion and top with tomatoes and balsamic vinegar. Cover and cook on high for 4 hours. Remove chicken and slice, if desired. 
  • Serve the chicken and sauce over angel hair pasta.
