Fresh orange zest is the star of this homemade salmon seasoning made with coriander, cumin, fennel, and other spices!

Step 1

Grind the peppercorns. Roughly grind the peppercorns and salt together with a mortar and pestle.

Step 2

Crush the fennel seeds.  Add the fennel seeds and turbinado sugar and crush lightly. Then add the remaining spices and grind together.

Zest the orange.  Add the orange zest to the  mixture.

Mix with a fork.  Work the orange zest into the spice mixture until there are no clumps.

Step 5

Season and grill.  Place salmon skin side down onto cedar planks, lightly brush with olive oil, and sprinkle with the salmon seasoning.
