Properly season the meat with salt and pepper before cooking. In a shallow dish, combine the flour and rosemary, then dredge the cutlets in the mixture and shake off the excess.

Rinse and dry your squash. Slice off the stem and bottom ends of the squash, so that both ends are flat. Slice the squash in half and lightly salt.

Deglaze the pan to remove any brown bits from the bottom of the pan with some of the white wine. Stir, then add the minced garlic.
