Ingredients

russet potatoes onion unsalted butter olive oil chicken broth heavy cream Dijon mustard 1Gruyere cheese kosher salt black pepper

Step 1

Peel and slice. Cut the potatoes into 1/4-inch slices and also thinly slice the onion.

Step 2

Cook the onions. Set the instant pot to the saute function, add butter and olive oil, and cook the thinly sliced onions.

Deglaze the pot. Pour in chicken broth and stir to remove any browned bits.

Cook the potatoes. Add the sliced potatoes to the pot, lock the lid, and pressure cook for 1 minute.

Transfer to baking dish. Use a slotted spoon to remove the potatoes from the pot, reserving the liquid.

Make the sauce. Add in the heavy cream, Dijon mustard, salt, and pepper to make the delcious sauce.

Add the cheese. Add freshly grated Gruyere cheese to the sauce and stir until smooth.

Broil and serve. Pour the sauce over the cooked potatoes, add more cheese, and place under the broiler until golden.
