Ingredients

curly kale Italian dry-cured salami sharp cheddar cheese English cucumber banana pepper rings Kalamata olives white wine vinegar extra-virgin olive oil Dijon mustard honey sea salt & black pepper

Step 1

Prep the kale. Rinse and spin the leaves dry in a salad spinner. Next, chop into small pieces and place the in a large mixing bowl.

Step 2

Chop , chop, chop. Cut the salami, cube the cheese, dice the cucumber, and drain the peppers and olives. Place all these on top of the kale.

Step 3

Whisk the vinaigrette. Whisk the white wine vinegar, honey, and Dijon mustard and slowly add olive oil until the dressing is emulsified

Step 4

Toss and serve. Toss the salad with enough vinaigrette to lightly coat the ingredients.  Garnish with a grind of freshly ground black pepper.
