INGREDIENTS
Dice the tomatoes and place in a large shallow bowl with finely chopped red onion and minced garlic. Season with salt and pepper. Drizzle olive oil and balsamic vinegar over the tomato mixture and stir gently.
INSTRUCTIONS
Add the basil and parmesan cheese and stir to combine. Let tomato salad rest at room temperature. Cut the bread loaf into 1/2 inch thick slices. Rub each slice with a halved garlic clove, then drizzle with olive oil.
Heat the oven or grill to 400°. Place the bread slices on the hot grill (or on a baking sheet in the oven) and cook until toasted, turning often.
Rub the toasted bread with a halved garlic clove to infuse it with more flavor. Serve alongside the bowl of tomato salad. If desired, garnish the salad with more fresh basil, grated parmesan cheese, and & balsamic vinegar reduction.
