Lemon ricotta cake is one of the most popular cakes served at social gatherings in traditional Italian families.

It's much like a classic lemon cake but a little less sweet and far more flavorful!

Ingredients

butter powdered sugar lemon granulated sugar whole milk ricotta cheese vanilla extract baking soda kosher salt all-purpose flour eggs

Step 1

Zest & juice. Collect all the juice and zest from the fruit, then set them aside.

Start the batter. Cream the butter and sugar together on medium speed until they are well combined.

Step 3

Mix in the ricotta. Mix the ingredients on medium speed until they are light and fluffy, taking around five more minutes.

Add eggs, extract, and juice. Crack a couple of eggs and mix them into the bowl, one at a time. Once combined, add vanilla extract and lemon juice.

Step 5

Add the flour & bake the cake. Spoon the cake batter into a springform pan coated with butter and powdered sugar. Bake for 45 minutes.

Cool and serve. Dust the surface with powdered sugar and serve with a dollop of whipped cream and fresh berries
