Preheat the oven to 400. Toss together the pitted cherries, sugar, lemon juice and zest, cherry juice, and cornstarch until well coated. Spoon the cherry mixture onto the crust and dot the top with small pats of the butter.
Assemble the enchiladas by Using a pizza cutter, cut the dough into 10 strips. Carefully lay the strips on top of the pie, weaving them over and under to make the lattice.
Whisk together the egg white and water with a fork. Brush the crust. Bake for 20 mins. Without opening the door, reduce the oven temp to 375 degrees and continue baking another 30 to 35 mins.
