I was late to the instant pot scene, partially because my mom never used a stovetop pressure cooker for fear it would blow its top! The modern instant pot makes pressure cooking much safer and easier and speeds up an otherwise lengthy cooking process by using steam heat. Once you give it a try, I bet you’ll jump on the bandwagon just as I have!
