Cast Iron Cherry-Berry Cobbler, a fruit-filled old-fashioned cobbler baked right on your grill inside a BakerStone Pizza Oven Box.

Did you know it’s possible to bake a cobbler on your gas grill? This summer, we’ve really enjoyed our new BakerStone Pizza Oven Box, which converts a gas grill into a gourmet pizza oven. But you can prepare more than pizza in this portable oven. Using my cast iron skillet, I baked an old-fashioned berry cobbler (Cast Iron Cherry-Berry Cobbler) right on the grill. Kind of awesome, right?!

You may have heard this basic cobbler recipe called Mountain Cobbler or 3-Cup Cobbler. Growing up, my Mom and Mamaw B. would make cobblers out of whatever fruit was in season — blackberries, peaches, strawberries — that’s the beauty of this recipe. You can use your favorite fruit or berries and it’s delicious every time!

We’ve made several homemade pizza “pies” in our BakerStone Pizza Oven Box this year, but I wanted to see how baking a dessert “pie” would work. One evening after baking a Salami Pizza with Garlic Dijon Aioli, I popped in the cast iron skillet and let our dessert bake while we enjoyed our pizza and socialized outdoors. I had a a few fresh blueberries and cherries — not quite enough of each for the recipe, but together they were the perfect amount, so Cast Iron Cherry-Berry Cobbler it was!

You’ve got to just try and imagine the aroma as this delicious dessert was baking and bubbling inside the pizza oven. Maybe this video I shared on Instagram will help. (click play when you hover on the photo)

Of course, this cobbler can be baked in your kitchen oven as well, but baking it outdoors was fun! The pizza oven is a steel box lined with baking stones that sits right on your grill. This nifty grill accessory is available at Sam’s Club locations across the United States.

Cast Iron Cherry-Berry Cobbler

Ingredients
  

  • 8 tablespoons butter melted
  • 1 cup self-rising flour
  • 1 ½ cup sugar (divided)
  • 1 cup milk
  • 2 cups blueberries
  • 2 cups cherries (pitted)

Instructions
 

To bake in the pizza oven box:

  • Preheat grill and Bakerstone Pizza Oven on high for about 20 minutes until temperature gauge reaches the flame icon.
  • Pour butter into a large cast iron skillet.
  • In a medium size bowl, whisk together 1 cup flour, 1 cup sugar, and 1 cup milk until smooth. Pour over the butter in the skillet.
  • Add fruit to a separate bowl and sprinkle with 1/2 cup sugar. Toss gently to coat, then spoon the fruit evenly on top of the batter in the skillet.
  • Place cobbler into the pizza oven and bake for 40-50 minutes, or until golden brown and bubbly. Serve immediately with ice cream, if desired.

To bake in kitchen oven:

  • Preheat oven to 350 degrees.
  • Place stick of butter in a 9×13 inch and melt in the oven while it is preheating.
  • In a medium size bowl, whisk together 1 cup flour, 1 cup sugar, and 1 cup milk until smooth. Once the butter is melted, remove the baking dish from the oven and pour over the batter on top.
  • Add fruit to a separate bowl and sprinkle with 1/2 cup sugar. Toss gently to coat, then spoon the fruit evenly on top of the batter.
  • Return the baking dish to the oven and bake for 40-50 minutes, or until golden brown and bubbly.
  • Serve immediately with ice cream, if desired.

Notes

This cobbler is best served warm.

    1. This recipe was written to be cooked using the Pizza Oven Box, so the cobbler in the cast iron skillet are in the box. When using the Pizza Oven Box, you do not close the grill lid.

    1. Chrissie, you can use all-purpose flour if you also add 1-1/2 teaspoons baking powder and 1/4 teaspoon salt to the recipe.

    1. Bird, my experience baking in the oven is with a glass dish so I can’t confirm the results with cast iron.
