Since it’s just John and I at home, I don’t normally make many desserts unless we’re throwing a party or entertaining — we don’t need all those calories! Sometimes, though, we just want a little something sweet so these Tiramisu Cheesecake Parfaits {for two} are perfect — smooth, creamy, and delicious and just enough for the two of us! No leftovers staring at us every time we open the fridge means less temptation, too!

John’s two most favorite desserts are tiramisu and cheesecake, so this dessert was definitely a win-win with him. The cheesecake filling is a mixture of mascarpone cheese, cream cheese, strong coffee, and a little Kahlua and after a couple of hours in the fridge the texture is thick and creamy.

I love making parfaits and no-bake desserts during the summer. Tiramisu Cheesecake Parfait can be easily adapted depending on the ingredients you have on hand. I used graham crackers dipped in strong coffee for my layers, but dipping vanilla wafers would work equally as well. Since this was a “spur of the minute” dessert I didn’t bother with trying to use lady fingers, like in regular tiramisu, so I guess this one was a “mock” tiramisu! No matter, it was delicious and a perfect treat for just the two of us.

Whatever you want to call it, this individual dessert has layers of creamy cheesecake filling flavored with Kahlua and coffee-soaked graham crackers topped off with sweetened whipped cream and a dusting of cocoa powder, making it hard to resist…so it’s a good thing the recipe is just enough for two!

Tiramisu Cheesecake Parfaits {for Two}

Ingredients
  

  • 1/2 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla
  • 8 ounces mascarpone cheese
  • 4 ounces cream cheese
  • 1/2 cup strong coffee cooled and divided
  • 1 tablespoon Kahlua
  • 1/4 cup sugar
  • 1 teaspoon cocoa
  • 16 graham cracker squares

Instructions
 

  • Whip together whipping cream, powdered sugar, and vanilla until stiff peaks form. Refrigerate while preparing the cheesecake filling.
  • Cream together the mascarpone cheese and cream cheese until smooth. Add 1/4 cup coffee, Kahlua, and 1/4 cup sugar and blend well.
  • To layer the parfaits, pour 1/4 cup coffee in a shallow bowl. Dip graham cracker squares one at a time (for easier handling).
