If you’re looking for a good crockpot chicken recipe for dinner this week, Slow Cooker Balsamic Chicken served over angel hair pasta is fantastic! This EASY chicken dinner takes just 10 minutes to prep, requires very few ingredients, and is a healthy no-fuss meal!

Boneless chicken breasts are seasoned with either fresh or dried Mediterranean spices — whichever you have on hand — and slow cook four hours with onions, tomatoes, and balsamic vinegar.

As a bonus, make this Italian-style chicken recipe paleo by using  a traditional aged balsamic vinegar and tomatoes with no sugar added. For a gluten free option, serve the chicken with steamed vegetables or zoodles instead of the pasta!

Slow Cooker Balsamic Chicken

One of the great things about this recipe is that it is so versatile. While my preference is to eat my Slow Cooker Balsamic Chicken over a bed of angel hair pasta, it is also delicious all on its own with a side of steamed broccoli (a gluten-free way to serve).

We’ve even shredded the leftover chicken to make yummy sandwich wraps with a little pesto and spinach leaves for weekday lunches. You can also use the chicken as a pizza topping with fresh mozzarella and parmesan. So good!

How to make Slow Cooker Balsamic Chicken — step-by-step:

Step 1: Add a tablespoon of olive oil to the bottom of the slow cooker. Place the boneless, skinless chicken breasts on top of the oil and season with salt and pepper. Sprinkle with the herbs, either fresh or dried, or a mix of the two.

The last time I made this recipe, I used fresh thyme and rosemary and used dried oregano and basil.

Step 2: Layer thinly sliced onions on top of the chicken. I almost always cook with sweet onions, like Vidalias, just because they are my preference, but any white or yellow onion will work with this recipe.

Step 3: Pour two 15-ounce cans of petite diced tomatoes, juice and all, on top of the onions — do not drain! This becomes a tasty sauce for the pasta.

Step 4: Add one-third cup of the secret sauce, a good traditional aged balsamic vinegar! I’m lucky that we have a specialty store in downtown Knoxville, The Tree and Vine, that sells imported balsamic vinegar and olive oils.

I seriously use this stuff ALL the time and take my bottle back for refills! I use their 18-year aged traditional balsamic vinegar on pizza, grilled chicken, pork chops, asparagus, and just about any roasted vegetable!

Remember, not all vinegars are paleo. The balsamic vinegars offered in grocery stores have caramel coloring added which contains sugar. Traditional balsamic vinegar is made by reducing grape juice and fermenting it in wood barrels for years!

Step 5: Set the slow cooker on high and cook for 4 hours. My Crock-Pot® automatically switches to the WARM setting once the cooking cycle is complete which is really handy if I need the food to sit for just a little bit longer.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 14.5 oz cans petite diced tomatoes
  • 1 medium onion thinly sliced Not chopped
  • 4 cloves garlic
  • 1/3 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp. dried thyme)
  • 1 teaspoon fresh rosemary chopped, (or 1 tsp. dried rosemary)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Pour 1 tablespoon olive oil into the bottom of a slow cooker. Add chicken breasts and sprinkle with spices — salt, pepper, and herbs. 
  • Add the thinly sliced onion and top with tomatoes and balsamic vinegar. Cover and cook on high for 4 hours. Remove chicken and slice, if desired. 
  • Serve the chicken and sauce over angel hair pasta.
