Sweet and crunchy, Poppy Seed Kale Salad is a delicious “almost homemade” side salad. Once you try it, you’ll be hooked!
Since the New Year we’ve really been working hard to add more green foods on our plates. In essence, I guess we’re trying to balance out those times when we splurge a little—everyone deserves a treat now and then, right?! Anyway, this Poppy Seed Kale Salad has proven to be a delicious alternative and has been showing up quite frequently around our kitchen. This salad has just the right amount of sweet from the creamy dressing, just the right amount of tart from the dried cranberries, and just the right amount of crunch. All together, it tastes great and is packed with the benefits of nutrients and vitamins from one of the top super-foods, kale!
What I love about this salad is that it comes together in just minutes, especially when you use a few shortcuts.
My “almost homemade” salad is dressed with one of my favorite salad dressings, Marzetti Poppyseed Dressing. This dressing is found in the refrigerated section of the produce aisle — it’s delicious and definitely a time saver. If you want to make a homemade dressing, this Creamy Poppy Seed Dressing by the Chef in Training sounds really tasty, too.
Another short-cut is tossing in carrot “matchsticks” from the product aisle instead of peeling and shredding carrots. I like to give the matchsticks a rough dice to make them a little smaller, but they work just fine out of the bag as well.
Removing the kale from the stems is made easier with this nifty new kitchen tool I found, a Kale Stripper! It’s basically like an herb stripper, but has multiple size holes so that you can strip the leaves right from the stem in seconds.
With these shortcuts, there’s no reason not to try this recipe, right? You can mix and serve the salad immediately, but leftovers will keep well in the refrigerator for a couple of days as well. Enjoy!
- 1 bunch kale, ribs removed and finely chopped (about 4 cups packed)
- 2 cups broccoli,, finely chopped
- 2/3 cups carrots,, finely chopped
- 1/2 cup dried cranberries
- 1/4 cup slivered almonds
- 1/2 cup Marzetti Poppyseed Dressing
- 1/2 teaspoon poppy seeds,, for garnish if desired
- Combine all ingredients in a large bowl and toss with Marzetti Poppyseed Dressing until well mixed. Serve immediately.
