- Vegetable oil | Give the cookies some moisture by adding vegetable oil to the dough. If necessary, substitute this ingredient with another high-heat and mild oil, like canola, peanut, or grapeseed oil.
- Eggs | Eggs help combine the simple ingredients in this recipe. More importantly, the eggs will allow the cookies to rise and give them a chewy texture.
- Strawberry cake mix | I used one of my favorite boxes of cake mix, the Duncan Hines Strawberry Supreme Cake Mix. It is DELISH and just what this simple recipe needs to give it all the sweet and sugary strawberry flavor!

How to make 3-Ingredient Strawberry Cookies
Three ingredients and four simple steps—Share the love this Valentine’s Day by making a batch of cookies created from boxed strawberry cake for your friends and family!
STEP 1 | Preheat and prep
Prepare these adorable pink cookies by preheating the oven to 350 degrees. Then, line 2 large baking sheets with parchment paper.

STEP 2 | Mix the ingredients
Now, grab your large bowl and add the vegetable oil and eggs. Whisk the ingredients until they are thoroughly combined.
Then, add the strawberry cake mix and use a rubber spatula to mix it into the eggs and oil. This cookie batter comes together so easily, you won’t even need a hand mixer!

- Mix the dough just until the ingredients are well combined. Overmixing can mess up the final texture of the baked cookies.
STEP 3 | Scoop the dough onto the cookie sheets
Next, move the mixing bowl over to the lined baking sheet. Use a small cookie scoop to portion out cookie dough balls, placing them 2 inches apart from one another.
This will give them plenty of room to rise and spread as they bake.

STEP 4 | Bake, cool, and serve!
You’re almost complete with this super easy cookie recipe! Just slip the baking sheets into the oven and bake for 8-10 minutes.
When the pink cookies are lightly golden around the edges, they’re ready to be removed. Be careful not to overbake them! You want your pink cookies to be a little soft when you remove them from the oven — that way you will have perfect cookies every time!
Take the baking sheet out of the oven and let the cookies cool before transferring them to a wire cooling rack. Allow the cake mix cookies to cool completely, and then it’s time to dig in!

- Halfway through baking, you can swap the cookie sheets so that the one on the bottom rack is moved to the top and vice versa.
- For larger cookies, use a bigger cookie scoop and bake for a few extra minutes until the edges are lightly browned.

How do you store strawberry cake mix cookies for later?
If you have leftovers, there are a couple of easy storage methods. At room temperature, you can place the cookies in an airtight container, and they will keep for about a week.
Store them in the refrigerator to make them last a little longer.
This recipe also freezes well if you need to store the cookies away for much longer. Just slip them into a freezer bag or freezer-safe container, and they will last up to three whole months!
When ready to enjoy them again, set them on the counter to defrost.

Ingredients
- 1/3 cup vegetable oil
- 2 large eggs
- 1 15.25 oz. Duncan Hines Strawberry Supreme Cake Mix
Instructions
