Cowboy Caviar works just about anywhere — serve it as a fresh appetizer with tortilla chips or as a colorful side dish for your next BBQ or picnic. Packed with black-eyed peas, black beans, corn, fresh tomato, bell peppers, jalapeño, and cilantro, it’s tossed in a simple vinaigrette made with everyday pantry spices. This easy no-cook recipe comes together in less than 10 minutes!

Cowboy caviar is one of those recipes I first heard about on social media, and I didn’t think much of it at first. But the moment I made a batch, I was hooked. It’s colorful, fresh, loaded with beans, and that tangy dressing pulls everything together beautifully.
It reminds me a lot of other snacky favorites I serve when company’s coming, like my Corn Dip or Avocado Salsa. Simple ingredients, big flavor, and zero stress!

Ingredient Notes for Cowboy Caviar Recipe
- Black Beans | Hearty and fiber-rich, drain and rinse black beans well so the dressing clings properly.
- Black-Eyed Peas | A Southern staple that holds its shape well and adds a creamy bite.
- Corn | Sweet and crisp for balance and color! You can use canned (drained), frozen (thawed), or fresh corn.
- Cherry Tomatoes | Quarter them so they are small enough to scoop.
- Red Bell Pepper | Adds crunch, a mild sweetness, and a pop of color.
- Red Onion | Finely diced for just the right bite without being overpowering.
- Jalapeño Pepper | Deseed it for a mild heat, or leave some seeds for extra spice.
- Fresh Cilantro | Bright and herby! Stir in at the end to keep it fresh and vibrant.
Dressing:
- Olive Oil | Forms the base of the vinaigrette — use good quality for best flavor.
- Fresh Lime Juice | Essential for brightness and tang.
- Garlic | For an added flavor depth. In a pinch, use a dash of garlic powder.
- Honey | A touch of sweetness to balance the acidity.
- Sea Salt & Black Pepper | Season to taste.
- Cumin | For a warm, earthy flavor.
- Smoked Paprika | Adds a subtle smokiness.
Variations and Substitutions
- Adjust the spice: A lot of the spice in fresh jalapeños comes from the seeds and white pith. For a milder heat, slice it open and get rid of the seeds and pith. For more spice, leave in some jalapeño seeds, or add even more jalapeño to the mix.
- Use lemons: If you don’t have fresh limes on hand, you can use lemons instead.
- Swap the fresh herbs: Use fresh parsley or green onions instead of cilantro if needed!
- Add avocado: Dice and fold into this simple dip just before serving for extra creaminess.
- Change the beans: Pinto beans, white beans, or kidney beans work well if that’s what you have.
How to Make Easy Cowboy Caviar
This easy recipe couldn’t be simpler—all you need is a bowl, a spoon, and about 15 minutes!

PREP THE MIX-INS. In a large mixing bowl, add the black beans, black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, jalapeño, and cilantro. Gently stir to combine.

MAKE THE DRESSING. In a small bowl or mason jar, whisk together the olive oil, lime juice, garlic, honey, salt, black pepper, cumin, and paprika until smooth and well blended.

COMBINE THE VEGGIES AND DRESSING. Pour the dressing over the bean mixture and toss until everything is evenly coated. Taste and adjust seasoning if needed.
CHILL & ENJOY. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled as a dip with tortilla chips or corn chips.

Storage Tips
- To store: Keep the cowboy caviar in an airtight container in the refrigerator for up to 4 days. The beauty of this dip is that it actually stores well in the fridge!
- To freeze: Not recommended! The fresh veggies just won’t hold their texture.
- To make ahead: Prepare up to 24 hours in advance! If you want to add avocado, add it just before serving.

- 1 cup cherry tomatoes quartered
- 1 large red bell pepper diced
- ½ cup red onion finely diced
- 1 jalapeño pepper seeded and finely diced
- ¼ cup fresh cilantro chopped
Dressing
- ⅓ cup olive oil
- ¼ cup lime juice fresh squeezed
- 1 garlic clove minced
- 1 tablespoon honey
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
Instructions
