STEP 2 | Add eggs and vanilla
Next, add the vanilla and eggs one at a time and beat them for another minute or two until the ingredients are well combined.
STEP 3 | Mix dry ingredients
Whisk the flour, salt, baking powder, and ground ginger in a separate bowl. Then, add the dry ingredients to the bowl with the wet ingredients and blend.

- 1 tablespoon orange zest
- ½ cup dried cranberries coarsley chopped
- ⅓ cup white chocolate chips
Icing
- 8 ounces cream cheese softened
- 4 tablespoons orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- ⅓ cup powdered sugar
Garnish
- 2 tablespoons dried cranberries
- ⅓ cup white chocolate chips
Instructions
- Preheat the oven to 350F. Cream butter and sugar together in a bowl until smooth.
- Add vanilla and eggs one at a time. Beat for another minute or two until the mixture is smooth.
- Whisk together the flour, salt, baking powder, and ground ginger. Add the dry ingredients to the bowl and blend.
- Add orange juice and zest, chopped cranberries, and white chocolate chips. Mix everything thoroughly. The dough is quite thick, but very sticky and soft.
- Line a baking tray (about 8*10) with baking paper and lay out the dough in a thin layer (about 1/2 inch). Flatten with a spatula and place the baking sheet in the oven. Bake for 20 minutes.
- When the cake is done, remove it from the oven and let it cool slightly (15 minutes).
Icing
- Beat the cream cheese with orange juice and zest, vanilla, and powdered sugar. Beat for no more than 1 minute or until ingredients are combined.
- Spread the cake with the icing and sprinkle the top with a few chopped cranberries.
- Melt the white chocolate chips – it’s convenient to do this in the microwave in 30-second bursts (3-4 times). Drizzle melted chocolate over the cake. Let the chocolate harden for 10-15 minutes.
- Cut the cake into 3- to 4-inch squares, then cut each square on a diagonal.
Notes
- If preferred, use the bowl of a stand mixer and combine until smooth.
- It’s easiest to melt the chocolate in the microwave for 30-second intervals about three or four times.
- Remember that the dough is thick, sticky, and soft.
